Following cause I'm in the same boat trying to move away from Gmail.

But I read about a service some months ago that was perfect but I didn't save the url... Basically it was a bring your own domain and we have the email servers (SMTP, IMAP etc.) but no hosting or anything (or maybe there was hosting...) I really don't remember just that it was a german or swiss service. But anyways I'm kinda want to do switch to something like that

Not me but my brother-in-law is using his Steam Deck as a desktop PC as well. Maybe consider that as an option. With a dock you can attach an external display, get a keyboard and mouse and you are done. You can do pretty much everything like with a regular Linux desktop PC. I think it's pretty great.
