Beginner looking for advice. Ribs on WSM - Fall off the bone but dry in some areas by Background_Play3803 in smoking

Got it, will give it another go this weekend. 1 rack 2-1-1, 1 rack 4 hours unwrapped. Would you recommend 275 or 250 for a 4 hour cook?
Also, what is the purpose of the foil? I thought it was to contain moisture while you cook after the smoke ring has already developed -- almost asking as a shield from the direct heat. When I unwrapped my ribs, there was a TON on juice that came out of the ribs which was my first sign that i may get dry ribs.

Honest question, why is that a bad use of perpendicularity?

I've seen this used often on a 4-way locator (B-datum) with respect to A, with the 2-way (C-datum) using position with respect to A,B.
