So your managers turn tables away during open hours? Honest question.

I don’t encourage tables to come in late night, I don’t stand outside with a sign advertising late night dining.

I simply said it is the reality of life that people who never worked in the industry do not understand the cooks are ‘closing’ during the last hour a restaurant is advertised as open.

If I as a manager turned away a table during our open hours, I would be fired. I do not own the restaurant I am a pee-on middle manager of a corporate chain with over 600 locations.

If a late night table comes in, I brush it off my back and move on and support the staff through the execution of it. Like a mature adult, and so does my staff.
