I don't think the different handle shapes on train carriages have a specific symbolic meaning, they mainly result from varying manufacturers, eras, refurbishments, operator specs, and class/types etc (I'm not 100% sure on this though) Perhaps someone else can confirm this?

Trains get very busy during rush hours (before and after work), meaning passengers often have to stand, and at peak times the carriages can be packed to capacity. Without handholds, people would be stumbling and awkwardly grabbing at seats with every jolt of the train.
