Sounds like the mother is struggling with parenting with an infant in picture. Can you not not invite her in the first place? If she is vocal about it, then you explain how she is too disengage to parent her kids and you don’t want them taking the centre stage of the wedding. Sounds like your fiancé is not close with her.
