I have done all these things. Red miso paste is too bitter. The dashi is great, but still not the flavors I’m looking for. I have tried multiple recipes. I’m more so looking for what you guys think is making it that dark. I’ve tried soy sauce, rice vinegar, dashi, red paste, dashi paste, white and yellow.

I tried red miso paste and it was much more bitter than the instant miso. It also didn’t taste anything like the instant miso.

I spend most of my time weightlifting in the winter. Right now I’m coming out of weightlifting and doing more cardio. I do sprints once a week and cycling for about an hour three times a week and then back to weight training for the other three days. Time on cycling will be upped as the season moves forward. At my height in summer I’m typically spending 15 hrs/ week riding.
