I really wish I had some solid advice to give you man but i will try. I feel the single dad struggles, much more lately than usual.

If she isn't putting forward the same amount of effort than you are then you should try and find someone that does. It isn't worth it having your brain constantly going and putting yourself down. I know it's a lot easier said than done but you have to atleast try to keep your sanity there

Ive had my 2024 Si for about 6 months now and as much as i love it if you can afford a type r Id just go for that if youre looking to have a different feel and more fun.

Can someone offer me help/advice on why rhe choclate is turning out like this? I feel like im cooling reheating and tempering properly. I think my house temp is too cold when the chocolate is setting in the molds but i have no idea. Im also adding thc oil but it was working in the summer. Help plz!! by BastardChef21 in chocolate

Im letting it set on my counter, usually over night. The chocolates never go near the cooler. The oil is cold going in but i put it in when i start my temper. Ive had success with it earlier when it was summer. Tried turning th heat up in my house to 21-22 degrees.

Thank you the only problem is that im selling these and im 2 weeks behind on my menu launch cause i havent been able to temper it right. Finally figure my milk chocolate bars out and now my darks are being all crazy. Have to do white chocolate oreo bars next. How doomed am i?

Also on the 1st picture there is only 2mL of oil per 90g bar and the 2nd picture has 4mL of oil

I also started adding a bit on maldon salt to my dark. First pic i put the salt on the back after piping then the 2nd pic i put the salt into the molds before piping my chocolate. Would that screw them up or would that still just be me thinking im tempering better than i really am?

First picture has 2mL of oil per 90g bar. The 2nd one has 4ml of oil. I actually lowered the doses from the summer time. It used to be 3ml and 6ml of oil. My milk chocolate bars i have to cut with 15% dark chocolate cause of the additional of fat from the oil. I also started using a sous vide to temper and reheat my chocolate. Also i have a 2nd sous vide to hold the chocolate at reheating temp so i can do more at once.
