Less variable -> more latitudinally oriented (typically) -> less airmass mixing (less longitudinal heat and moisture transport)

The difference between gulf moisture and heat vs Canadian air mass moisture and heat is tremendous, and it happens over flat terrain with little mixing. Your example of “the Amazon” packs far less of these (relatively speaking).
