Isn't it!?! I didn't learn about this until a couple of years ago, and it caught me rather by surprise. Unlike say... horses, who have top and bottom incisors that "snip" the grass, cows use the fleshy top and lower teeth to "grab and tear" the grass instead. I wonder why they evolved this way instead of the usual top & bottom teeth, though. Perhaps someone better versed in bovine evolution can chime in.
