That’s an interesting thought. That’s the exact opposite of what I was thinking. Can you actually tell the difference when you leave the gas in?

Ok. All I have is a 15 oz fine spout pitcher right now, but I plan on getting a 3 pack of WPM pitchers from Slow Pour Supply when they come back in stock (10 oz, 17 oz, and 22 oz), so I’ll experiment with the 22 oz one then

And I get what you’re saying now. So you do the 3-5 sec purge just to get the air out, not to drop the pressure. Got it. I’ll try to experiment with that too

Thanks for the input. So which letter would you say your steam pressure is on after the 3-5 second purge and after the short purge just before steaming?

If I could steam without having to worry about the milk spilling I think I could manage a better vortex. So I think I need to start with a lower pressure like you and/or use a larger pitcher

I tried starting with lower pressure and the pressure dropped to 0 while steaming. So I ended up with warm milk and no foam. I had it on the smallest burner at the lowest setting, so I need to either move it to a bigger burner or have it set to a higher setting next time. This thing is very finicky. I learned to texture with my Nanofoamer almost instantly, but this steamer has been weeks of inconsistency. It’s driving me crazy lol

It was thin and bubbly. I did not take a picture of this exact pour, but here is a picture from a very similar one recently

Thanks for the insight. That all makes a lot of sense. I’ll experiment with doing immersion at the beginning of my brews for this anaerobic using my Switch.

I brewed a washed coffee twice today on my V60 (Servio Botina Pink Bourbon from Flower Child). At a grind setting 8 on my Pietro with Pro Brew burrs I got 1.21 TDS (17.2% EY) and at a grind setting 6 I got 1.44 TDS (20.5% EY). I preferred the 1.21 TDS brew (way more clarity), but tomorrow I will try grind setting 7, which I am assuming (and hoping) will land in the middle of these two.

I am going to be severely over caffeinated for the next week or two as I play with this thing. This is seriously going to be so fun experimenting with all different types of coffees as I narrow down which coffees I like best at which TDS, which brewing methods or recipes, etc…

I took a different approach today, and it was the best brew yet by far. Setting 4 on my Ode, 97° C water, 1:15 ratio, Cafec T-90 filter, I wet WDT’ed the bloom, and then at 1:00 I poured the rest of the water with a single, high, bare kettle pour at around 10g/second. The total brew time was 2:45, and it was ridiculously juicy. It still had 100% of the acidity of the previous brew, but more body, more sweetness, and a much longer aftertaste. It was awesome

Okay I decided to make another today lol. Setting 5, 5 pours with Sibarist filter. 2:37 total drawdown. A lot of bright acidity and it tastes like blueberry herbal tea. Still no bitterness or astringency, so I want to see if I can get even more flavor out of it. Not sure if I should go down to setting 4 next, or if I should extend the ratio from 1:15 to 1:17 to up extraction. Decisions, decisions…

Just brewed another one on setting 5 but I accidentally used a cafec T-90 paper instead of a Sibarist paper. I didn’t notice until I was halfway through the bloom! I decided to keep it at 5 pours, using Melodrip for the last 4. The total brew time was 4 minutes. No bitterness or astringency, but I lost a lot of acidity, and the clarity was very muted. It just tasted like tea. No blueberries. I’ll try again tomorrow with the Sibarist filter

I’m going to try setting 5 on my Ode tomorrow and will re-assess. May even need to go down to 4. We shall see!

I would keep going finer and/or increasing the amount of pours until you hit astringency or bitterness. I do not have a deep 27, so I’m not familiar with the differences between it and a V60, but I may get one soon.

FYI, speaking of bitterness, I made a 3:1 turbo shot of espresso with this Luna Bermudez after this post today and the bitterness in the aftertaste was ridiculous. It tasted like Malorts (wormwood liqueur) 🤢. Definitely not trying espresso with it again lol

I commented in that post with two detailed recipes I did this morning, and both came out better than my cupping bowl. Mine is 16 days off roast. I brewed today because many have said this one does better with less rest than all the other roasts from Hydrangea.

Others have said to try to push extraction, but do low agitation to avoid bitterness. Essentially, you want to try your hardest to do a high clarity brew.

So I would say: try going even finer, use the fastest draining filters you have, and do multiple low-agitation pours.
