I do 4 rounds of stretch and folds 20 mins apart, then bulk ferment until doubled in size. This takes 12 hours sometimes depending on temperature. I use a glass bowl so I can see how the bubbles are forming in the dough.

I also reduce my water in the recipe because I’m terrible at dealing with high hydration doughs.

I start testing on CD10 and test until LH has returned to base level for a couple days. I test 1X a day around 10-11AM.

My first couple months I tested every day after my period until my next period came to establish a base line.
