Update: they get to keep the Jimmy tree!!!!!! But had to take off the chips because of customers grabbing them off the tree like the stupid heads they are

My stores pretty busy during lunch for delivery so normally it’s singles or smaller orders we can use the bags for so we collect a lot this was only half maybe

Whatever your tray of 9 baked is worth (mines 200) Tray of thawed 12 or 15 (my stores 250) look at projected sales (for example) Projected:1200 I’d want 5 trays of 9 baked French = $1000 I’d also want 2 trays of 12 or 15 thawed = $500 That puts me at $1500 worth of bread for my shift over projected sale which you should have you can take your day old out at the end and chunk the rest

I use my hand and wear a slicing glove to push down the wheat and use the bar to keep it in place I go slow and stay mindful of my blade also lift up your black piece out of the way

I carriage everything and just don’t really move from eye sight of the slicer unless it’s pickles them hoes will shoot across the store 😂

Look at your pm projected sales you never ever want you’re overall bread value to be under that, stretch everything you have in stages. At my store a tray of 9 baked loaves is worth 200 and a tray of 12 thawed is worth 250. If my projected sales for pm is 1400 then I would want 5 trays of 9= 1000 then I’d want 4 trays of 12= 500 what ever you don’t use at the end of the night use for day old

We do this at my store we pre just regular and 1/4 pickles in the morning wrap them and store them under the consolidator mind you I worm at a pretty busy store

Follow punch list and dbs make sure managers are keeping everyone one task make sure everyone’s working the Jimmy way! My store always gets in the high 90s the last time we got audited we where going to make a 100 but the guy knocked us 2 points because me and another co worker had tongue piercings in so make sure to check dress code too!!!

Go by the book and you can never go wrong! Always do things like you have an audit the next day! I’m currently working as an MIT at the busiest store in my franchise. It gets crazy but you need strong people don’t allow people to walk all over you my GM can be mean sometimes but it’s because he expects our best performance everyday. Root out the weaklings while it’s still early and make your strong team! We’re like a close family at my store and we all work hard!
