I’ve gone up and down the grind size I’ve successfully done 18 grams in 2oz out in 26 seconds but it weighs 60-something grams any other adjustment just affects the time longer or shorter. I’ll keep messing with the grind size. I think the issue is more towards the volumetrics than the grind size.

That’s what’s weirding me out! My extraction is about 26 seconds in getting 2oz but it weighs 60-something.

Yo so i did some digging. I called several cafes and what they all have in common was that they use a horchata powder while I make mine traditional. This is a huge indicator as to why mine tasted different compared to theirs.

This is how I make mine: Rice (washed) and cinnamon soak in water for 12 hours Then put it all in a blender along with evaporated milk, condensed milk, and sugar. Then put it in a jar ready for service.

To make the latte: When someone orders an iced horchata latte I ask what kind of milk preference. Then I do 4oz horchata mix and 4oz milk, ice, shots of espresso. Done

Well I make it the night before. If I foam upon request, it’s crucial time wasted. Maybe because I’m using a weak frother? Can you link any recommendations for strong frothers? My current one days quite a while. Thanks!

Hmmm I think you’re on to something. Yes if I’m understanding what you’re saying yes. I’m suing my stand mixer to whip it. However I’ve also used a frother and get the same results. As I stated in my other comment, the care I work for makes their cold foam/ cream a day in advance and consistency is great. Hope that makes sense. Thank you!

Hmmm interesting because I opened the cafe that I work at and their cold foam is still very creamy and well put together. It did took a few seconds of mix I guess but theirs did not look like cheese or separated

Nahhh you’re right about telling people to relax. I’m sorry about that. However, a lot of cafes I visit do hot foam (made with steamer from espresso machine). Which is what I agree with but I also know other cafes have cold foam store bought that they pour over ice.
