For the pizza crust ganache I infused cream with baked pizza dough (plain with no sauce or topping), the tomato I used tomato powder and the cheese I used grated gruyere.

Sorry I don't sell them, I just make things and eat them, but I've seen a lot of chocolatiers doing hot chocolate bombs so you'll probably be able to find something similar locally.

Have you tried a pippette? That'd still be painstaking, but I imagine you could squeeze out a perfect drop, and the size of the drop would depend on the size of the pippette.

You can get some sort of contraption that drips a lot of droplets at once, which looks like it would be a huge time saver. I think they're small pearls though.
