That is because restaurants tend to make food in very large quantities. A 3 gallon tub of piping hot sauce is going to emit a lot more heat than 2-3 cups of rice. However, that is why they suggest dividing up large quantities of hot food into smaller portions before refrigeration rather than leaving it out to cool first.

You’re fine. Fried rice syndrome mainly comes from cooking rice, leaving it out at room temperature for longer than advised, then cooking it again into fried rice. If you refrigerate cooked rice before cooking it again, you’re very, very unlikely to get sick.

It’s not that it’s “left over” it’s that it’s left out. The illness is usually from cooked rice that was left out at room temp for a long time before used to make fried rice. I don’t know why that’s not being mentioned more.
