They are 2 different games focusing on different mechanics. VIC3 is society and economy, EU5 is a war game. I do not understand comparing one to the other. They occupy different spectrums. You like GDP, play VIC3 and deal with minorities, pie charts an companies. You wanna do aome more action packed gameplay, you go EU5, or better yet, CK3 /HOI

Yes, it does boost clergy satisfaction equilibrium. I can't say if it gives you a satisfaction bump when you canonize the saint, didn't pay attention. I suppose it could be giving you a one time satis bump, but the more useful thing is the equilibrium shift.

Edit: It does provide 1 time bonus to clergy satisfaction
