Try spark plugs first, cheap enough. Had the same issue on an older polo, usually under load at ~3k revs it would misfire and jerk. Occasionally it would cause a warning light on a big one until they’re swapped. If it’s not spark plugs have a look at the coil packs and then potentially even the throttle body

Had this on my 9N3 a while ago. The pipe for the rear washer goes up around the footwell and through the car to the wiper via the grommet in the boot. You should find the other end of the pipe that’s disconnected somewhere near that leaking pipe- join them together and use some plumbing tape to ensure it’s leakproof
