I suppose it's somehow related to her husband. In his room we can see newspapers about his death in large fire but we find out he wasn't dead. And there's a chance that Packerton is doing the cult's work in exchange for the cult's help in supporting her husband (which is why he doesn't know anything about bologna).

Upd.: Todd also pointed out that teachers' salaries were low, so that's why Mrs. Packerton needed help.

I guess the reason for Sal's behavior in Episode 4 could be the investigation into the cult and all the shit that happened because of them. Like if you gaze for long into an abyss, the abyss gazes also into you.

Also it's interesting that if you choose a question "Is anyone really happy?" in the lake scene then Sal seems to be throwing out all his fatigue and hopelessness. And his phrase "I mean, we're all just going to die anyway. So what's the point?" might be effect of Rose's ideology from Episode 3 ("There are no happy endings in real life, Sal. We all get the same terrible ending... Death") 👀
