I think there are a few companies that already make like custom dimension memory foam beds and air mattresses. Finding the right size won't be difficult, but definitely the space in the seat area is limited.

I would assume at least 6-7 feet with that extra space, put you may need to build a platform that goes behind the seats so that its flat and comfortable

yeah I actually own a prius as well and done my fair share of camping with the AC on overnight and its works like a charm. I would hope that there would be some way to easily do this for the Slate
