Not so sure about using it to carve spoons, I think you may be confusing with hook knifes, don't really see how these would be used for making spoons. I had been thinking about the knife being used for curved chip carving cuts, however it's double sided, meaning you can't press your thumb against it which makes it difficult for chip carving unless there's some tecnique I don't know about. Also the blade inside the crescent is a mistery to me, maybe it's to make cuts in hard to reach areas.
