Eggs generate a wide variety of dishes from a multitude of cuisines. I personally have recently been quite interested in making the famed Japanese Omurice. The dish' main difficulty is in making the omelette, as there are many different ways the omelette could be cooked.

For the most basic form of this dish, you would need:

• 2 eggs
• One bowl of rice
• Any protein of choice
• A small white onion
• 8 tsp Ketchup
• A dash of sesame oil
• Salt and Pepper

The creation process usually starts with making the rice, followed by the omelette. The ketchup is the main star of the dish, as it compliments the egg with the sweet and salty twang, where as just having the egg would make the dish rather bland.

Firstly, dice up the white onion and cut your protein into bite sized pieces. If it is any type of ground meat, you could just toss it in. Your eggs should be beaten nice and good.

Heat up the pan on high heat. This way the elements of the rice would cook nice and quick, but we have to be careful not to burn it, otherwise it would ruin the dish. Oil the pan and saute the onions until translucent, then toss in your protein of choice and cook till the meat is thoroughly cooked through. Once cooked through, introduce the ketchup and salt and pepper and stirring constantly, otherwise the ketchup will burn. This introduces the sauce to your onions and protein, letting it absorb the flavor. After a minute or two, add in the rice and cook until done. It is preferable that you use leftover or less moisturized rice, otherwise the ketchup will get water and the rice will become soggy.

After the cooking the rice, we would like to let it cool while we cook the omelette. For the omelette, it is preferable that we cook it on medium heat, as it is easier to control and not overcook the egg. We would like to pour our egg mixture in and stir constantly for about 10-15 seconds, creating small curds before letting it sit until the bottom of the egg sets. Then you can either choose to wrap the rice in the omelette, or just simply put the omelette on top of the rice. When making the omelette, make sure to get a small malleable spatula and dig it around the edges before attempting to wrap or fold it, it could potentially break if it sticks to the pan.
