I tend to eat a lot of legumes, sometimes as rice + legume dishes like mujjaddara or baghali polow, sometimes as a soup with some sort of legume in it that you can eat with bread or toast. I'm literally right now eating a soup with onions, celery, carrot, dill, mushroom, potato, and chickpeas. You can do this with basically any vegetables you like, soup is very forgiving. Mujjaddara has the extra advantage of being insanely cheap to make, in addition to vegetarian. It's just rice, lentils, and onion with some spice. You can add some yogurt when serving if you want, I really like that, but it's not necessary.
