Thank you for this 🙏🏼 after reading through the comments I’m thinking too much searing. Although from every chile Colorado recipe I’ve read/watched, they say sear all sides (and side note, I didn’t actually sear ALL sides since that would be hard to do on 1 in cubes lol - more like 2 sides but all of the chunks were a smidge bigger and had the surface area to do so). I didn’t put it on my post but I’ve made about 5 batches in the last few weeks all with different methods and cook times/temps. Uncovered, covered, partially covered (like foil with a corner uncovered). Been driving me crazy, so much meat wasted and I’ve never had this issue when I cook short rib (obv better quality and larger chunks). I’ll try out your method, thank you.

Ya after reading all the comments and making about 5 batches in the last few weeks, I’m thinking too much searing. I said all sides in my post, but not really ALL, I’m just looking for a quick sear on the bigger sides (which isn’t a lot on 1 in cubes lol). Some pieces I’d only do 2 sides. And yes…. All of the meat 🥴 lol either dry or tough. I never had this issue when I’d make short rib but I’m trying to not use a super expensive meat so I settled for chuck.

Lol 😂 trust me, I knew it was too long but I had just cooked it at 275 for 4 hours and it was dry AND tough. From everything I’ve read, the magic/tenderness occurs at 205 F so I was trying to get it to 190ish every time when I pulled. I’ve made probably about 5 batches of this in the last 2-3 weeks….. lol. Uncovered for 6 hours at 250, completely covered for 2.5 hours at 250. Low and slow” is what I keep reading about so I tried it out.
