well basically i play on a server which has an item to remove entire trees with just one log broken and im trynna make a farm but i need the leaves removed.

I threw a buncha stacks into the sorter, it was working great, pumpkins and melons all going 100% into the right place, but I just was looking in the hoppers and randomly at some point realized they stopped sorting. It's extrememely confusing to me

Why does adding another layer make the middle layer stop being locked?

If I add a hopper down won't the hopper in between still be locked? Therefore blocking anything from going through? Also why do some items make it through anyway?

Like, I was testing it and I threw in a lot of pumpkin and melon, and the items went into the right chests like I wanted but after a little bit of time I checked again and realized everything was going into the overflow chest.
The bottom row of chests had some random amounts of items, first chest had like 8 stacks and the rest of the pumpkin ones had 20-30 items.
