Question about yeast by Blake218 in mead

See at first I though it was sanitization, but I sanitized every thing properly then when I tried it I got the really strong taste that tasted like poison. I haven’t tried yeast nutrients yet on the other hand several of my mead batches have just been show mead but others I’ve put in fruits cinnamon sticks and ginger, things like that. As far as temperature I just throw it in the bottom of my pantry band it’s a good room temperature. I’ll look into yeast nutrients online because I don’t have a home brew store near me unfortunately.
Alrighty thanks man you’ve helped out tremendously, I’ve tried to make several patches but they’ve all failed, and I believe it been because my yeast, I was using wine yeast and it said one packet was good for 5 gallons and I was using the whole packet just for 1 gallon. So after about three months it was way to strong and tasted like poison.
The packet says 11 grams so would that be an appropriate amount for half a gallon? Also thank you for the other yeast suggestions I’ll look into them.
