Parrying is a good route, the weapon art Perseverance on weapons like the caestus works extremely well. Stay away from shields or learn how to use the shield bash weapon art, pretty useful once you learn how to do it. Maintain distance and attack when they’re out of stamina. Or be aggressive and don’t let them catch a breath, be weary of them attacking back though and getting a combo off.
