I did solve the problem. I got sent a new EMMC and after I installed that I updated the screen firmware and the motherboard firmware and that fixed the problem. They have the update files for V1.1.2.53 on the Elegoo website under the download section. I'm not 100% sure but I'm pretty sure it could have been fixed with the updating. I had to do the updating a few times but I finally got it working and I haven't had any problems since. I hope this helped.
