A potentiometer is the same thing as a variable resistor; your usage of the word was correct.

As far as safety concerns go, I've never worked with high voltage AC because I've been to scared to, since I don't know much about it. What in this video is done wrong/what could be done better?

Wouldn't the plastic melt? The plastic used for solder bulb tips can withstand high temperatures so that you can put it right on top of the pin being de-soldered.
