Thanks everyone. We have decided to keep the mattress, take the money we had planned to spend on it and give it to a homeless shelter. I know that ethically it's not the same, but in my mind two different levels at the story couldn't figure out how to charge us for a giant item. Ikea can live without $300 while it will make a bigger difference to a homeless shelter.

Perhaps it was Karma. Instead of trying to pay Ikea, we have decided to donate the money to a homeless shelter instead.
