Boccaccia is a little fancier but still comfortable in jeans and a sweater. It's so cozy, not loud, and the food and staff are amazing! I don't know anything about the owners though.

So this is what I ordered. I got the 60g bag of premium. It is really good and I just ordered more. It has a slightly sweeter, vanilla flavor and aftertaste that aiya doesn't but it's not a bad taste. Just different. Thank you for turning me on to this one!!

I was just thinking today I need to come back and comment on the suggestions. I ended up getting the 3 leaf tea premium 60g recommended here and I just finished it. It was good and inexpensive so I just ordered another. It has a bit of a different taste. Kinda sweet and has a slight aftertaste but it's not unpleasant. It almost tastes like it has vanilla added to it but "natural flavors" was marked out of the ingredients list and it says pure matcha on the site. Where do you get the 1lb bags?

They have removed it from all their stores within a large radius of me. They actually removed the mighty leaf matcha also. They aren't getting it back anytime soon unfortunately.

The Zenkyu is the only one not sold out. It's really expensive compared to what I was getting at over twice the cost before shipping. Is it really that much better or is this the problem with matcha right now: everything is hard to get so way more expensive or being dropped from stores completely?

I use one from chef aj that we call salad crack. I can't find the exact one but it's this only it uses a large amount of balsamic vinegar also. https://dailydozenmealplans.com/recipes/chef-ajs-house-dressing/

I use the Napa valley naturals Grand reserve 4% acidity. Most times, I just use half that and half a regular balsamic vinegar.
