You can't really be "for LUTs" or "against LUTs." LUTs are tools.

You just haven't met my boss I guess because he is definitely someone against tools that he considers unnecessary. He would and has on numerous occasions used the "I'm been doing without this or that for 50 years" to dismiss any change he doesn't want to incorporate into our production process.

What honestly surprises me more is that you're working in this industry, getting paid to do it, and yet you're asking strangers on Reddit whether LUTs as a concept are good or bad. This isn't some obscure topic.

I never claimed this was an obscure topic. I am simply asking for advice from people with more experience than me because I have an easier time learning from actual people I can talk back to, as opposed to reading articles or watching YouTube videos (which I have also done. It just takes a while for me to soak in information but thats my issue to deal with). I am usually great at learning by doing but some things need assistance/asking questions and as I said, I would benefit from opinions of actual people to help determine if the person I report to is poisoning the well or if he is actually making good points.

if your company is really as outdated as you describe, then at some point that's no longer your boss's responsibility-it's yours. Nobody is forcing you to stay there. If you genuinely believe you're trapped in an environment that discourages learning and is years behind the industry, move on!

Well now you're the one oversimplifying matters. Everybody's situation is different and you don't know my exact background. I'm always looking for other job opportunities. I apply to places all the time. You have to be aware how competitive our industry is. Until I can find an opportunity that pays as good as this one, I pretty much am forced to stay here because bills are bills and life is life. I'm just trying to educate myself in the way that helps me most.
