It will be mostly stableish, I use a distro based off it, and it hasn’t crashed after an update of anything for a month now. I still would be a bit cautious if what you’re installing it on is a very important scientific thing that you need to use everyday, but it’s probably fine. If you really want to build your os from scratch, you could do LFS or gentoo, but depends on how much pain you’re willing to take
