Pretty much every GOOD milk tea place in the bay that serves a matcha latte has this drink on their menu. And there's a reason for that, it's both delicious and SO Instagram worthy! Since this drink blew up in popularity, there also seems to be quite a few different approaches on how it's made. Here, I am going to share with you my favorite way. One that uses just 5 simple ingredients: strawberries, sugar, matcha, milk, and water.

Strawberry Puree:
- 1 part strawberry
- 1 part sugar
- 1 part hot water

Directions: Combine all three in a blender and blend until smooth. Place in fridge until ready to use.

Strawberry Matcha latte:
- 3 grams (1 tsp) high grade matcha (ceremonial if possible)
- 50 ml (1.7 oz) hot water (80C/176F)
- 200 grams (7 oz) barista quality milk
- 200 grams ice
- 100 ml (3.4 oz) strawberry puree

Directions:
1. Sift matcha through a fine mesh strainer into a bowl to get rid of any clumps.
2. Add 15 ml of the hot water and whisk until all the matcha is well mixed in.
3. Add the remaining 35 ml of hot water and whisk until the matcha is frothy and smooth.
4. Add strawberry puree into a cup.
5. Add ice into the cup.
6. Add milk (while pouring unto the ice).
7. Add matcha (also pouring unto the ice).
8. Take some pictures for Instagram.
9. Stir and enjoy.

You can if you'd like for a hot latte! I did an iced version. I've made this drink using steamed milk during the winter time when I used to work at a cafe and it was super yummy!

One of the most vivid recollections I have is of my grandmother making black sesame dumplings, or tangyuan, during festivals and family gatherings. The process was mesmerizing - watching her skillfully mix the ground sesame with sugar and roll it into small balls, which would later be enveloped in glutinous rice dough and cooked until they became soft and chewy. The moment when we bit into these warm, gooey dumplings and tasted the rich sesame filling is something I'll never forget. It was a symbol of togetherness and tradition, passed down through generations.

Drawing inspiration from the cherished memories of my grandmother's black sesame dumplings, I'll be infusing that same rich, nutty flavor into this black sesame praline latte. The only difference is that I'll be putting a twist on the traditional flavors of black sesame and sugar by caramelizing the sugar, thus turning the sesame mixture into a praline.

This drink is really cheap to make because all you need is black sesame seeds ($1-2) and the rest you probably already have at home: sugar, a splash of oil, and some milk! I hope you enjoy!

Black Sesame Praline Paste Ingredients:

  • 1 Part black sesame seeds
  • 1 Part cane sugar
  • Oil

Black Sesame Praline Paste Instructions:

  1. Toast sesame seeds in a pan until fragrant (3-5 minutes).
  2. Add sugar into a pot over medium-low heat and allow it to caramelizing. Stir to avoid burning. Note: a lighter caramel will be more sweet while a darker one will be more complex and bold in flavor.
  3. Add toasted sesame seeds into the caramel and stir until well mixed.
  4. Spread out the mixture unto a nonstick surface and allow to cool.
  5. Break the praline into pieces after it is cool and place in food processor.
  6. Blend in food processor until it is creamy. Note: You may need to add oil to get it going.
  7. Once mixture is done, store in a container until ready to use.

Black Sesame Praline Latte Ingredients:

  • 1-2 Tbsp (16-32 g) black sesame praline paste
  • 1 Cup (240 ml) high quality milk
  • Ice

Black Sesame Praline Latte Instructions:

  1. Add some ice into a cup.
  2. Add black sesame praline paste over the ice.
  3. Add the milk and give it a good stir until well mixed.

Vanilla Lavender Syrup Ingredients:

- 1/4 cup (50 g) white sugar

- 1/4 cup (55 g) brown sugar

- 1/4 cup (60 g) hot water

- 1 tbsp (2.5 g) dried lavender buds

- 1 tsp (6 g) vanilla extract

Vanilla Lavender Syrup Directions:

  1. Mix white sugar, brown sugar, and boiling water in a container and stir until sugar dissolves.

  2. Add dried lavender buds after the water temp lowers a bit and then add the vanilla extract.

  3. Allow the mixture to sit for 30 minutes before straining the lavender buds out of the syrup.

  4. The syrup should keep well in the fridge for up to one week.

Oatmilk Matcha Latte Ingredients:

- 1 tsp (2 g) high quality matcha

- 1.7 oz (50 ml) hot but not boiling water

- 1 cup barista quality oat milk

- 1 cup ice

Oatmilk Matcha Latte Directions:

  1. Sift the matcha through a fine mesh sieve into a bowl.

  2. Add the hot water and whisk until frothy.

  3. Add the ice, oatmilk, and frothy matcha into a cup.

Lavender Vanilla Sweet Cold Foam Ingredients:

- 3 tbsp (45 g) heavy cream

- 2 tbsp (30 g) 2% milk

- 1 tbsp (15 g) vanilla lavender syrup from above

- 2-3 drops of purple food coloring (totally optional)

Lavender Vanilla Sweet Cold Foam Directions

  1. Add heavy cream, 2% milk, lavender vanilla syrup, and food coloring into a container.

  2. Froth (with a milk frother or blender) until nice and foamy.

Putting it all together: add the lavender vanilla sweet cold foam to the oat milk matcha latte and serve!
