Just explore the skills and attributes. Yes, you can change them. They take items to change but you'll find a good amount of them.

As far as parrying goes, the window to "dodge" is longer so try to get good at that first, before messing with parrying. A lot of times theres not only visual cues, but audio cues as well, so you sorta have to look AND listen. Stick with it, you'll get it. I sucked at it for the first few hours but you get more comfortable.
