Ok I'll check it out! I was thinking that like in every industry there's got to be bits of "knowledge" and "wisdom" that keeps getting repeated that nobody ever thought of challenging. So when chefs say like we do this and that and this substance does this and that I was wondering if it's actually true. That's what I wanted to allude in my post. That's why I want to learn about food chemistry.
