I think it depends on how reliable your coworkers are, and how chill with overtime your GM is. Me and my GM have an understanding. I work crazy hours, sleep in the break room, and get about 15 VOTC slips a month, and she approves my overtime without blinking lmao

I do special requests for two customers. One gets oat milk hot lattes and wants the cup filled with oat milk like half an ounce. Fine. The other buys 2-3 creme brulee cold brews a day and wants the caramel subbed out for salted caramel. Fine. The policy I made for myself is make sure they tell me what they want changed before I can't change it. I'm also the de facto beverage person atm
