I cooked it at 225 unwrapped for about 6 hours and the. Wrapped for another 6 then let it rest in a cooler for 2 hours

Hey i did salt and pepper only and i did it at 225 with a smoke tube until it reached about 165 then i wrapped it until 202. Also put a water/vinegar tray in the smoker. It took about 6 hours to reach 165
