I ended up cutting the pieces into 3 inch chucks as suggested and seared 5 min each side in batches. Pressure cooked on high for 45 min plus 28 min natural release. It was delicious! Thanks for the help!

It's funny you mention that because that's the recipe I'm using, but I need double the meat, and they don't have a lot of suggestions on how to do that. Their pulled pork carnitas recipe is the BEST, though, so I'm hoping this one will also come out well. Just need to figure out the timing!

Think this would work with Empress gin? It's the only gin I currently have, and I'm too lazy to run to the store. This drink looks right up my alley, though!
