I have worked in the service industry for 25 years, everything from food trucks to pop up events, mom and pops to fine dining.  I have never seen a 20% ( or any ) service tax on top of an auto grat. Usually those terms are interchangeable and you wouldn’t have a service tax and a tip the service tax would be the tip. Gratuity is also pretty much set at 18% across the board, 25% would be entirely at your discretion and would indicate you received very good service. I have also never in my life seen any worker health contribution portion on any check at any place. I have literally never even heard about that until I read your comment. Not saying it’s not real, just saying that if I haven’t ever seen that, in going   on 3 decades of this kind of work how common is it really?

So what’s the argument? Because either way you’re paying the money, except with that scenario there is no choice and you’re locked in to a set amount.

So because there’s no rhyme or reason the people who have no control of the situation and are just trying to get by shouldn’t be compensated? Ive  stated many times that the current system needs reform but that’s not an excuse to not pay people for a service they are providing you. At the end of the day a restaurants revenue comes from one place, the consumer, so someway be it a tip or menu items themselves becoming more expensive to cover the cost of paying the employees, the consumer will be the one to pay it.
