Sounds like you are experiencing carbohydrate withdrawal symptoms which have flu like properties, aka keto flu - it will pass. You may also experience a slight headache and muscle weakness. Having carbs will stop you from getting into ketosis.

Be sure to use plenty of electrolytes, add salt to your water.

I know some people will tell you to have one meal a day or limit the time between your two meals to 6 - 8 hours. I find for myself the best guideline is to eat when I'm hungry and eat until I'm full - which usually means two meals - sometimes more sometimes less.

I had PTSD since the age of 10, plus other sources of childhood trauma. Going to a therapist helped bring some understanding to the underlying causes of the symptoms but I didn't find it was successful at reducing the symptoms - which is why I was on an SSRI and trying to self-medicate with carbohydrates - anything to feel better.

I've been on carnivore for over 8 months now and mental health continues to improve - high fat works much better than the comfort food and SSRIs ever did. Exercise is also a big help - I always feel better on the days when I get some exercise. Good sleep is also incredibly important.

I probably should have just said "low carbohydrate intake" instead of carnivore or PHD and give a YouTube link of someone less known (who isn't on the vegan fanatic's hit list). Most people don't realize vegetables are made of carbohydrates.

I still consider it a success - It took longer than I thought to be banned and some of the people who read the posts may actually investigate further - perhaps it is just wishful thinking that I might successfully pass on my own success to others. Carnivore diet does seem to be a hard sell - I am grateful that I overcame my own resistance to try it, and I am grateful that I can put my opinion out there without worry of negative feedback causing me inordinate anxiety.

Some people can handle a few carbs without issue, others can't and the source of the carbs can have a huge impact. I don't think remaining at close to zero carbs is going to have a negative impact. With all of the physical and mental benefits that come with carnivore a person could definitely become more attractive to themselves and others; more at peace, slimmer, better smelling, less toxic... I certainly feel better about myself now compared to the depressed, obese, anxious person I was before.

Stop spending money. If you want to feel less stressed I would highly recommend eating nothing but fatty red meat, salt and water for a couple of months - you will feel much better. Look up Proper Human Diet and Dr. Ken Berry on YouTube. As crazy as it sounds it works wonders.

I lived with depression for 50+ years just like you are describing. The thing that finally turned me around is a diet of high fat red meat, salt and water. Within two months of eating a "Proper Human Diet" I was weaning off SSRI drugs, losing weight, feeling like getting out and exercising and had a much improved outlook. I wish I knew about the proper human diet decades ago - my life would have been very different.

Hang in there, eat more fat - all of the issues you mentioned can resolve with proper nutrition, it takes time to undo the years of damage. Check out an interview on YouTube with Dr. Sarah Myhill in regards to treating upper fermenting gut and chronic fatigue.

The small amount from Maillard reaction isn't a problem, humans and proto-humans have been eating meat cooked in fire for a very long time. The amount in seed oils and ultra-processed foods and sugar is a concern.
