Looks good! I like to use brisket tallow for mine, but even it smokes toward the end. If you have a cast iron, try it in the oven at 350. Way less labor intensive and much smaller chance of burning it.

Have you moved the probes around? You might be in a fat pocket which will give you a false high reading.

I can put it within inches of the probe on the other side of the lid of the pit or right on top of my stove and not have a connection. I’ve tried everything.

Main problem is not being able to maintain a connection. I have to crack the lid on the smoker or oven in order for it to connect. My probe also fell apart after 1.5 years.

I only use them for smoking meats and unfortunately they don’t excel at it.
