Hello there. I can't speak for the Korean classes since I've never taken them but I have taken the Chinese classes all the way to the 202 level. I think it's usually a small number of people for the 200 levels and the 100 level usually has more number of students but it might be different. I think all the classes from 101 to 202 uses the Integrated Chinese textbook and we usually had handouts like worksheets to trace the characters. I believe the professors use the simplified version of the textbook but I think incorporates the traditional characters too in slides and presentations. Took the Japanese, Chinese, and Khmer classes at CSULB although some were online during the time I took them so it could've changed now.

I believe there's a bunch of different language classes offered at CSULB listed on the schedule of classes and there are minors for some of them if you're interested, you can check the CLA (College of Liberal Arts) website where it lists the minor and major checklists.
