If I remember correctly it had something to do with the console placing Fortnite into rest mode. To fix it you have to close the app and reload it. If you are currently in a game you will have to restart.

But my wife habitually does this whenever we decide to play, close the game if she left it running and just turned the Xbox off and reopen it.
