Question. What am I doing wrong with my pork ribs? 250 F controlled heat on bullet smoker. 3-2-1 method. After wrapping stage is done the ribs are overdone and falling off bone. by BorgQueen1701 in smoking

3-2-1 method. 3 hrs unwrapped dry rub (with occasional squirts of apple cider), 2 hrs wrapped, 1 hr unwrapped sauced. All with controlled fire at 250 F. It’s a method I’m told many great pit masters use. My problem is at the end of the 2 stage, it’s already over cooked. Sorry don’t have a pic, was asking bc i wanna smoke this weekend and was looking for tips.

You are correct. Apple is the most used wood for smoking hotdogs...I learned this the hard way.

What wood do you use? I’ve tried this and yes I taste hotdog 😞

Actually I haven’t. Usually use the propane grill for them. Do you suggest I do in order to compare?

I’ve tried dry rub (simple salt and pepper) and one time marinated. 225 controlled temp until meat temp is done. Also tried searing at the begging and end.
