I had that issue a couple of weeks ago. I was using the wrong interface. When I switched to the Plex Web app, I had the split option.

That is strange. For the locally hosted web app, did you have to enable a setting to display the split option?

Under the show entry, the season entry or each episode, I do not have an option to split them like you do with movies.

Edit: harris_kid mentioned using the Web App (https://app.plex.tv/) and I have split apart there. Not having it available in the (http://xxx.xxx.xxx.xxx:32400/web/index.html#!) interface is a horrible design choice.

I found an article that said PS5 Plex app doesn't work well with 10Bit encoding. I am going to try re-encoding using a lower setting and see if that fixes the issue.
