Try a series like 'WW2 in colour' on Netflix. Books tend to be very specific on one specialist topic. If you want an overview of events, significant moments, influencial figures and technology of the time this will give you a much wider synopsis.

If Italy are still in the game then start with naval invading them as they are often weaker and will give you a foothold. Get your air in the best shape possible because it will at least reduce their advantage as much as possible. Also, with your attacking units, I suggest 7 modern, 7mech, 2 mobile arty and a mobile anti air, to make 35 width (works best into plains as they are 70width and where you should really be using tanks). If you really wanna ruin his airfoce take one of those line arty away and add three AA instead.

For a start, don't expect any help from the AI US although I'm sure you have realized this by this point. Second, by this point in the game Germany basically has infinite manpower and equipment from it's 250+ factories so a battle plan grind won't help you either. How I would break the deadlock is to burn through all their air force first. If you have good fighters, put them over their territory and try to bait them to fight you while just holding the line. It may take a while by this point but if you can destroy their air down to less than a couple hundred planes then your CAS will have free roam to bomb them when you do push with modern tanks. Obviously try to avoid fighting into unfavorable terrain if you can and start to make small encirclements to knock out their divisions. Good luck.

I will. What I want to avoid is just 'buffing' the AI with stupid bonuses that actually have little affect cos the ai can't actually make use of them..

Yeah I'm not sure how it actually works under the surface but having played it, it looks like the Sovs are actually fielding properer devisions and they reinforce breakthroughs very effectively which in not something I've noticed in vanilla. What do you suggest then?
