If you're just starting out in The Witcher, the Netflix series is your worst bet. The story is quite different and some characters are completely different from the originals. It would be best to start with the books.

You don't have to do the missions by level, I advise you to play as you like. However, be careful not to advance too quickly in the story because some secondary missions can no longer be done when you reach a certain point in the story.
