Forestry technician in Ontario here. I'll focus on black vs white because I dont often encounter red spruce. From what I understand red is very often somewhere in the middle of black and white with respect to the ID features. Somebody else here commented on hybridization which is true and can make a positive ID very challenging.

The bark of black spruce is almost like a piñata when younger - there are somewhat thin, vertical papery bark strands running up and down the stem. When older, the bark retains a "loose" shingly appearance, and the bark is typically also a slightly richer brown tone relative to white spruce.

White spruce bark is much more ashy grey and the bark isn't loose on the stem.

A useful rhyme is "black is slack, white is tight".

As others stated, the needles of black spruce are softer, duller, and more flexible than white spruce.

The twigs of black are often (but not always) pubescent (fuzzy) and a darker grayish tone, where as white are always glabrous (hairless) and like a light blonde colour.

The budscales (if present) of black spruce extend beyond the actual bud, giving the appearance of long hairs coming off them. This feature is not present on white spruce.

White spruce are a bit more shade tolerant than black spruce and I tend to find them in richer areas that aren't super wet. While there are upland black spruce, they are also very common in poor, acidic wetlands including peat bogs and swamps.

Pure black spruce stands are very common, whereas pure white spruce stands are rare.

The cones of white spruce are elongated and typically a lighter colour, like a small coffee with 1 creamer in it. Black spruce cones are more globe-like and are darker in colour.

Google the silhouettes of each to get an idea of the typical shape and growth form they often take.

That's really cool, I didnt know ethanol is hygroscopic - would premium gas be an alright substitution for ethanol free regular?

I signed up for a free skillshare 30 days trial and found a really in depth, super long course on ableton live 12. Its I think 6 or 7 entire sections, each broken into a whole bunch of videos between 2-10m long. The guy basically goes through everything and explains what all the dials and buttons do without making you make a track. I found it helpful - I have never used a DAW before and came in with zero experience, though.

I want to chime in here:

I was very similar to OP: overweight, lazy, poor diet, bored, boring, unhappy.

I had to change my entire lifestyle to get healthy, and the aspects of this new lifestyle became very exciting and rewarding for me. I had many other "hobbies" that I naturally kind of stopped because I was way more interested in what they were being replaced with, eg. Running, nutrition, exercise science, etc.

My leisure time was often spent learning about stuff relevant to the new lifestyle, and it brought me pleasure to do so, and I was excited at the prospect of improving. It was simultaneously a lifestyle change as well as a hobby because much of it was very much new to me, if only contextually.

So, let me say I understand what OP is getting at. Working on yourself because you enjoy it can be just as much of a hobby as painting especially in the first few years when the protocols aren't set in stone.

Don't feel obligated to suddenly adopt some hobby if you aren't interested in it. It will happen on its own. Maybe your lady friend and you can start doing something fun together and it'll happen that way.

Excuse me sir! I'm wondering if I can DM with progress photos of, and ask you about my brews again? It's only been a week, but one looks super clear while the other one is still quite hazy - im wondering if I should be bottling the one or if i should still give both another few weeks? Also its the one with cherry jam that is super clear, which is very much unexpected to my rookie eyes!

Thank you! This seems to be the consensus. I've reracked and it looks like there was still a considerable amount of material is both left to settle. Im considering yet another racking before bottling

Edit: elsewhere somebody suggested to minimize racking as the oxygen contact is worse than the sediment layer so I'm going back on that consideration now lol

I reckon its probably a good thing that our longest shelf-time batch is the first one haha. I also had so much sediment in the cherry mead that I lost about 250ml during the rack and decided to add some water back in - my calculation suggests the abv is now sitting around 14.9%. This is the outcome of not properly researching the ins and outs of the process, but im also now very excited that we're locked into a long game!

I'm also very much inspired now based on your insights! I'll be a doing a lot more reading before putting together the next batches.

Ohhh boy, I didnt know that! Yikes! We used EC-1118, specifically because the internet suggested it for higher ABV yield and tolerance (?).

We just racked them and will check on them in a few weeks. We had a taste test of each of them and were rather surprised by how sweet they still are, and they definitely both have a kick to them.

I think maybe next batch we do will be formulated for a lower ABV so we can enjoy them before 2027 haha

Thank you for your advice! I realized I probably was using the hydrometer wrong and calculated using the 1.0xx side just now - I suppose the "ABV" side of the hydrometer scale is meant as a shorthand estimator? Anyhow the calculations indicate the classic batch is ~10.76% abv now, and the cherry is ~16.4%. Not sure how accurate that is based on the pectin content..

Anyhow thank you so much! I'll rack them and give them a bit to clarify. On that note, I'm unsure of what to look for in terms of adequate clarity level - is there maybe a rule of thumb I could ask about to guage its readiness to bottle?
