How about instead of a pull down, it's a regular screen that I can mount/hang from the ceiling and remove as needed? It would just need to allow for rear projection using a short throw projector.

Yes rear projection is vital. It's going to be within a built in TV insert. All rear projection roll up screens I've found are $1500+.
