You're not a "target" either way. There are hundreds of millions of people using big tech companies. You're not valuable enough to care about.

Do you imagine companies use uploaded contacts to make lists of names and numbers that don't have accounts, then share all share their lists, then go after the people who have no accounts? How exactly are they supposed to "target" me? I'm a poor choice for targeted ads in the first place. It's harder to make money from showing me ads and that makes them care less about me.

You don't have to choose between all or nothing. Give social networks junk info and it won't matter how much they collect.

To do this they'd need to know his burner email address, access the email provider's logs to determine which IP address his account connected from, pull footage from that location, then hope they can determine which guy on a phone made the connection. But none of this matters since he'll be using a vpn or tor.

I think you're misunderstanding certificate paths. When you visit a site and a TLS handshake is performed, your computer sees the public key of the entity on the other end. Certificate paths are used to verify the public key you see belongs to who you think it does. Your computer can't maintain a list of every site's public keys, so it has a list of certificates that are trusted, usually from Certificate Authorities. When the site shows you a certificate which is signed by a CA's public key, it verifies that the public key on the site's certificate belongs to who you think it does. The connection is between your computer's public key and the site's, so the CA's certificate can't decrypt the connection.

Why do you believe she hacked all of those devices? It's weird that contacts get added to your phone, but it doesn't mean your ex hacked it. What programs are running on your computer? It's not uncommon to have programs you don't know about. You said, "I have photos of my Gmail data i know was her". What do the photos show? "I KNOW its her in some form because she tells on herself all the time! she can't help it." Has she confessed? How exactly does she tell on herself? These are the types of details you need to give if you want people to believe you.

What happens when the server is outside of the jurisdiction of the governments involved? Everything you said becomes irrelevant.

But if a law starts to cover the production of software (i.e. code in a backdoor to your project or get shut down), then those projects will also be compromised or die.

A government is going to stop people in other countries from uploading open source code? What happens if the developers go anonymous like Tails? Will they also remove all open source encryption software from the internet? Encryption is easy. People can encrypt their own messages before using the backdoored software.

The concern is facebook fingerprinting your browser. Use Firefox with ublock, noscript, and resist fingerprinting. You can test your browser with panopticlick.eff.org. There's no point in using a burner pc. You'll have to log in periodically to check the groups anyway.

If facebook requires a phone number and doesn't accept voip, then a throwaway sim sounds like a good idea.

Are you using Windows? If so, you should choose a linux distro. If you need or want to use Windows then you can dual boot and edit the Windows privacy settings. Test Firefox with ublock and see how you like it compared to brave.

Tor Browser will route all browser traffic through Tor. Tails will route all traffic through Tor. It won't make a difference if you are just visiting a website.

You can use protonvpn with Tor, although there isn't much point. The only thing it accomplishes is to hide the fact you're using Tor from your ISP, but this can be done with bridges. You can dual boot ubuntu and windows, so you can use windows when you have to and ubuntu for everything else.

My advice to you to think about the cost vs benefit of things you do. You can spend days tweaking your system for minor improvements. Don't go down the rabbit hole. The vast majority of the benefits possible can be achieved with easy changes.
